I have a few recipes where I need more egg yolk and there is "too much" egg white.
Sometimes I change it, less liquid but with egg white. But sometimes it really is "over". Yes, and that's how the producers do it, the egg white is then sold as "waste".
With the current protein hype, that's not a problem. It's sure to sell.
Macarons, merengue need egg white... For example? Who bakes a lot and needs icing?
There are even recipes on the web with more egg whites (more like egg yolks).
I mean, you can usually use egg yolks as well as egg whites. So "normally" I don't need the egg whites either. Whole eggs are ok, they are enough for me.
