Hello Acalyanur, thank you for your inquiry. All flours are alcohol-free. The TerraSuisse semi-white flour is vegan and there is no cross-contamination with alcohol. What is the breadmaking strength of this flour? What is its W value?

Hi ada_consol, thank you for your inquiry. The W value is ascertained by analysis with the alveograph. However, such examination does not take place in our laboratories. We use the extensograph, which is an instrument similar to the alveograph, but provides another type of assessment. Therefore, a comparison of results referring to the W value is not possible. The extensograph stretches the dough and measures its strength and elasticity to the breaking point. In the alveograph, on the other hand, the dough is deformed with air pressure until the bubble created bursts. The W value can be interpreted as the ratio in cm² between energy and surface area in the extensograph. In semi-white flour, the value lies between 89 and 94 cm². Kind regards, Your M-Infoline team
