The flour type indicates how many minerals in mg per 100 g of flour are contained in the dry matter and depends on the degree of grinding. Most customers in Switzerland are not familiar with this information on flour types and it is therefore not printed on the packaging.

In Switzerland, the term is only used within the industry, but the term "Mehlyp", "Type farine" or "Farino tipo" appears repeatedly on German, French and Italian packaging and causes confusion. In this context, you may be interested to know that L-cysteine is no longer usually of animal origin, but is mainly produced using biotechnological processes in which bacteria produce large quantities of the desired cysteine from sugar and some mineral salts. M-Budget household flour is a type 550 white flour with a milling ratio of around 65%. This means that most of the flour comes from the flour kernel, which is light in color. In the mill, the grain is ground using so-called roller mills with different rollers.
