Hi, I would love to buy this fantastic bread at the Unterägeri branch, but apparently that's not possible. I know a lot of people from my area who really like this bread and we would like to find it here and not have to drive to the center of Zug. I would be very grateful for your reply. Now the Hercules bread has been changed again "new recipe". Unfortunately, it is hardly any different from the other breads. The special sourdough flavor and the seeds have been lost. It's a shame that such a top product has been changed and is now ordinary.

Hello. I bought a Hercules loaf of bread today. At home, I accidentally placed it next to an indoor air quality measuring device, and a little later the device showed an increased formaldehyde concentration (0.2 instead of 0.01 mg/m3). Is there an explanation for this? Does the bread contain something (hopefully harmless) that is (incorrectly) recognized as formaldehyde by the measuring device?

Hello Sgrambs, Herkulesbrot is a bread made by hand in our in-house bakeries, consisting of water, flour, salt, yeast and sourdough, which is characterized by a long fermentation time. Sourdough is a microbiologically leavened flour dough that gets its aromatic, slightly sour taste from metabolic products naturally produced by lactic acid bacteria and yeasts. Studies of various sourdoughs have shown that this mainly produces lactic, acetic and succinic acids, accompanied by various volatile organic compounds, including large quantities of alcohols and aldehydes, which also remain detectable in the baked bread. The increased value you measured is probably due to the volatile organic compounds formed by the sourdough, which are intensified by the long dough proofing; corresponding verification measurements on our part confirm this picture. Why does Migros use rye in almost all its breads? You can make very tasty breads, such as sourdough, without rye! So I have to resort to other suppliers. It's a pity, because these loaves look so good...

Hello Pixieling, thank you for your question. The proofing times for Hercules breads are as follows: - Sourdough 24 h. This is kneaded into the final dough - Proofing time for fully kneaded Hercules bread dough: 3 h - Final proofing of portioned and shaped Hercules bread: approx. 60 min.
- Grain distribution in Hercules bread: 75% wheat, 25% rye Other breads with long proofing times: - All breads from the stone oven bread line, proofing times approx. 5 - 6 hours - Pane Passione classico: Proofing time 24 - 48 hours. I don't understand why you advertise it extensively, but it is not available in my Migros in Adliswil. I have heard others complain about the same problem in their Migros store

Before the recipe change, we were big fans of this bread, by far the best in the Migros range. With the new recipe it no longer tastes as good, and the consistency is completely different. would it be possible to go back to the original recipe? Please?

Dear M-Infoline team, thank you for your reply, we buy the bread in Buchs SG. The last time we bought this bread at the end of Feb. there was a green round "New recipe" sticker on the packaging and suddenly there were small grains in the bread, it was fluffier and we felt it had less sourdough, which was clearly not the case before. I also checked the label again and it said Hercules Classico. We would be very happy if we could buy the "original" again.

Would it be possible to offer the bread in smaller paper bags? I think the large paper bag is unnecessary, also for ecological reasons.

I've been buying this sourdough bread regularly for a few months now. I live in Chernex and used to go to Montreux on purpose for this bread, because it was really excellent. Unfortunately, since the beginning of the year, it hasn't had the same consistency or taste. What's changed? Is it possible to find the old version somewhere? Even on order? Thank you for your reply.
