Hello smartcoyote, thank you for your contribution. Garofalo is different to M-Budget in terms of production and recipe. The pasta differs in the drying process, for example. With Garofalo, the process is gentler and slower (comparable to the fermentation of bread). The degree of grinding of the wheat is also finer. Garofalo is a so-called bronze pasta (rough surface) and IGP certified (origin-related). This is different with M-Budget. The water content is higher due to less drying and the degree of grinding is coarser. Kind regards, Chloe
