Products with a high water content do indeed experience a slight weight loss over time, i.e. the dough ingredients always have a higher weight than the end product. The prevailing humidity of the environment plays a significant role in this: the drier the air, the more and the faster the bread dries out and loses weight.
However, the difference in weight you describe is actually too great: according to legal requirements, minus 15 g weight deviations (8 hours after leaving the oven) are tolerated for Farmerurdinekl bread. The weight of 470 g measured by you is clearly not within this tolerance range and we would like to apologize for the bread being too light.

Can you look into this again? Because the bread only weighed just under 470 grams last time. I'm not prepared as a customer to pay that much and then the weight isn't right.
