Is 1 bag of liquid yeast really enough for 1 kg of flour? Or is it better to use 2?

Depending on whether the dough rests overnight or only for 1 hour, you use 500 g of flour (i.e. similar to yeast cubes) or up to 1 kg if the dough is to rise overnight or even longer. If I make a plait with 500g of flour, do I use the whole bag of liquid yeast? It is for 500-1000g of flour. Is the 38ml the same as a 42g yeast cube? My plait rose very large. Is too much yeast unhealthy? Children eat it too.
Hello Daira, thank you for your inquiry. Liquid yeast should be used in the same quantity as compressed yeast - the 38 ml corresponds to about 41 g of a yeast cube. However, the yeast activity starts earlier with liquid yeast. The amount of yeast to be used depends on the ingredients used and the chosen production process. The fact that the plait has risen well is a sign of good yeast activity. We can reassure you that yeast is by no means unhealthy: baker's yeast contains a lot of biotin, folic acid, various minerals and trace elements. Yeast also contains plenty of high-quality proteins and various important B-group vitamins. The minerals and trace elements it contains are beneficial, for example potassium, sodium and calcium. In September, Migros implemented a comprehensive range adjustment throughout Switzerland. Items with low customer demand were removed from the range or are now only offered in large stores. Such assortment adjustments are made regularly to make room for new products.
These decisions are always based on the needs and purchasing behavior of customers.
We are aware that such changes can also be perceived negatively, but we are convinced that they will have a positive impact on the majority of customers. We will also statistically monitor the effects of the changes so that we can reconsider decisions and take countermeasures if necessary.
The liquid yeast in question will no longer be sold at Migros Sulgen, but will still be available at MM Weinfelden, MM Amriswil and MM Gossau. Alternatively, fresh yeast 30g cubes and organic fresh yeast 42g are available in Sulgen.

I have a bread recipe where I have to add 15g of yeast and 2.5 dl of water to the flour (500g). If I now use liquid yeast, do I still have to add the 2.5 dl of water or can I leave it out?

The liquid yeast only replaces the conventional yeast cube, so the 2.5 dl of water should not be omitted.

What is the reason for offering liquid yeast! In my opinion, it brings no advantages! Is it probably because desk clerks need to improve their innovation statistics! Definitely not a customer need! And they won't sell a gram more yeast overall! As a customer, I would prefer fewer products, but ones that are well cared for and always available!
