Hello, Have you changed anything about your organic Gruyère? It used to be excellent, creamy and with a nutty flavour, but over the last year or so the quality has been steadily declining (in my opinion). It has become dry and characterless. I've been disappointed on several occasions not to find the Gruyère to which I'm accustomed, and I'm wondering why. Thank you for your enlightenment. With my best regards

Depending on the type of milk used, the taste of the cheese may vary. However, this must always be within certain tolerances. We regularly taste our products as part of in-house tastings. We have informed the person responsible of your message so that they can take the cheese into account at the next tasting session. Taste can also vary according to the length of maturation.
