Basel bread bought at Claramarkt in Basel, unfortunately spongy, very difficult to cut, is it perhaps under-baked? I bought the same bread at Migros Dreispitz in Basel. It is much easier to cut and not so spongy, it is much firmer and tastes great. I wonder why there are such clear differences. Is it the baker or the Migros?

Thank you very much for your feedback. We are very sorry that you are not satisfied with the Basel bread from our Claramarkt in-house bakery. After internal consultation, we can inform you that the recipes for our homemade breads are basically identical in all stores. Is Basel bread frozen before it is sold? In Avry center .

Hello, I'd say not, because every time a variety is made centrally, it says "Fresh from the oven: baked on site from a > frozen product <". This is written on the back of the packet of every loaf baked in this way, which can be found anywhere in the country (a question of logistics to be available everywhere). But for regional breads, I noticed that there was no such mention, so I deduced that it was fresh bread, therefore directly prepared in the workshops of the canton in question.
