These sausages are a copy of the Austrian Käsekrainer. Even the name is an allusion to it. Too bad they are only available in Zurich. The best way to prepare them, as in Austria: prick the sausages several times with a fork, baste with oil and fry over a moderate heat. If necessary, pierce several more times. At the end, turn off the heat and leave to rest in the pan for a few minutes. This creates a nice cheese crust.
