I have been using this mustard for years and really like it because of its sweetness. But recently it's only been spicy! What has happened? Has the recipe been changed? I can't find any indication of this on the label.
Hello saschae, thank you for your inquiry. We're sorry that you didn't like the mustard as much. There have been no changes to the recipe for this product. We have checked the last three productions based on your report, but could not find any deviations. Our mustard is extensively checked and tested at regular intervals during production and bottling. This mustard is probably still very fresh and due to the extremely cold weather recently, the natural degradation of the spiciness has slowed down, so that the mustard is currently even spicier than you are used to. The pungency of mustard is created by essential mustard oil, which is released during production when the individual mustard seeds are ground. This pungency is unstable and continuously degrades during storage. This means that every mustard is very spicy immediately after production and becomes milder the longer it is stored. This natural process also depends on the temperature. Low temperatures, such as now in the cold season or storage in the fridge, slow down the reduction in pungency, while higher temperatures accelerate the reduction in pungency.
