The designation is protected accordingly. To be able to produce a Vacherin Mont d'Or, cheesemakers must meet the requirements of the specifications for Vacherin Mont-d'Or, which are also available on the umbrella organization's website. Article 10 of these specifications states: "Production is seasonal and takes place between August 15 and March 31. Outside the production period, producers and affineurs may not produce a similar cheese that is strapped with a spruce bast strap and sold in a fir wood box". This time restriction is explained by the fact that the cows come down from the mountain pastures earlier to spend the winter in the barn. This limits the period of cheese production.
