Is the lemon curd pasteurized?
Hello raebel, our lemon curd is not pasteurized as it is considered temperature-stable. The combination of high sugar content and low pH value leads to the inhibition of pathogenic growth. The cooking temperature is above 90°C and the filling temperature is above 76°C. Best regards, your M-Infoline team
