The cheese now tastes more like a mild Tilsiter cheese and has lost its tangy, fresh flavor. We no longer like the taste of the cheese. This corresponds to the ideal ripeness and is specified by Tilsiter Switzerland. Nothing has been changed in terms of ripeness. The cheese tends to be more recent than mild. We therefore cannot understand your statement. If you find a milder cheese again, please let us know the lot number and best-before date. This will enable us to clarify the matter in more detail. Hello M-Infoline Team. Thank you very much for your reply. We have bought another Tilsiter Rezent cheese (lot number: 1117184 / best before date: 20.04.2023). This cheese also tastes the same as mentioned in the first post 16 days ago. It is not possible that my wife and I realized at the same time (2-3 months ago) that the cheese is no longer the same as it has been for the last 10 years. All the Tilsiter Rezent that we have been buying sporadically for the last 2-3 months have the same mild taste and no longer have the spicy and lively flavor that we love. The cheese with the lot number you mentioned has also been matured for at least three months. It is important to know that there are natural fluctuations in cheese ripening. Winter cheeses ripen a little less quickly. However, nothing has been changed in terms of production or ripening time.
