How can I tell from the online nutritional information that the values listed there—which seem very low—apply to cooked pasta (e.g., kcal per 100g)? That seems very unusual to me; otherwise, for example, with pasta or the M-Budget rice noodles, the value is always listed for uncooked pasta.
This likely leads some consumers to think the product has “great nutritional values” (see other comments). When dry, it probably has (as it should) practically the same nutritional values as white rice, since it’s otherwise only 10% water.
It’s very important that the nutritional information is consistent and comparable online as well! If the manufacturer only lists the values for a prepared product, this must also be clearly indicated online.
Hello SweetchiliGrizzlybär, the nutritional values refer to the prepared product. The word "prepared" was missing from the online listing. Thanks to your feedback, we were able to correct this—thank you very much! The nutritional values now state "100g, prepared." Unfortunately, incorrect product information cannot be completely ruled out in online listings. Please note: Ultimately, the information printed on the packaging is always relevant and binding. Best regards, your M-Infoline Team

Hello
If the rice noodles are gluten-free, does the rice not have to be declared gluten-free? the rice is milled in mills where gluten-containing foods are also milled.
HelloTizicaro, Thai Kitchen rice noodles do not contain any gluten-containing ingredients, nor should any carry-over (traces) be expected. If a product contains gluten-containing ingredients, this must be openly declared, stating the gluten-containing cereals (wheat, spelt, rye, barley, oats, etc.). Ingredients containing gluten must not be "hidden"! Traces due to possible carry-over in the production process must be indicated at the end of the list of ingredients with a "may contain" note ("may contain gluten" or "may contain traces of gluten"). Allergenic ingredients must be highlighted in the list of ingredients, for example in bold print or with capital letters (examples: wheat starch, WHEAT flour)
Kind regards, your M-Infoline team

Hello, I have a follow-up question. Rice is often ground in mills that also grind wheat. That's why I'm not sure about your answer, because the IG Zöliakie clearly recommends only eating labeled rice flour. Can you guarantee that the rice is not contaminated? The trace amount is not decisive in the EU, and in Switzerland it is interpreted slightly differently. Hence my question: apart from the trace amount, is there any other information? Otherwise, the product is unfortunately not safe.

Hello, where did the beloved rice noodles get stuck? They're not available in Lucerne at the moment... Greetings
Hello kev435_, thank you for your request. We are sorry that you are missing your favorite. Unfortunately, we are currently experiencing delivery problems. We currently assume that we will not be able to offer the product again until summer 2022. Perhaps we can make the waiting time more palatable for you with rice noodles? Best regards, your M-Infoline team

Are they gluten-free?
Yes, only from rice flour
Good morning LarsR If a product contains gluten-containing ingredients, this must be openly declared, stating the gluten-containing cereals (wheat, spelt, rye, barley, etc.). Accordingly: Pay attention to the list of ingredients! Traces due to possible carry-over in the manufacturing process must be indicated at the end of the list of ingredients with a "may contain gluten" or "may contain traces of gluten". Spices are gluten-free by definition. Seasoning mixes may contain gluten, but this would then have to be declared (e.g. seasoning mix [with wheat starch]). Best regardsFrederica
Hello LarsR, Thai Kitchen rice noodles do not contain any gluten-containing ingredients, nor should any carry-over be expected. They can therefore also be considered suitable for people with coeliac disease. Best regards, your M-Infoline team
