Hello, the last 3 packs of coconut milk (ean5021047105027), batch no 2112UWR data to 12.12.2022 went straight into the garbage can after opening. In fact, even after correct storage in my storeroom, even after shaking the packaging before use, a gray mass dissociated from its liquid fell apart with a rancid smell and taste. I realize that I'm not the only one who's been disappointed with this product lately. Do you have any quality problems with this product? Can I get a refund? Thank you for your reply.

I really like to buy this coconut milk for cooking and have wondered a few times why the coconut milk is sometimes liquid, half like milk, and sometimes quite solid, like a paste.
Hello nathic, thank you for your question about coconut milk. As soon as the coconut milk is exposed to temperatures below 15 °C, it can separate into a solid fat phase and a water phase (lump formation). To homogenize the milk again, we recommend shaking the packaging very well. If the milk is still lumpy, it should be sufficient to heat the milk and/or stir it well with a whisk. We point this out on the packaging of the coconut milk: "Thickening of the coconut milk is possible with temperature fluctuations. This has no effect on the product quality. Shake well before use." In a cooking course in Thailand, I learned that when cooking coconut milk, the fat should separate out and then float to the top. This somehow doesn't happen with Thai Kitchen coconut milk and the curry likes to turn into a paste. If I cook in the same style with the Alnatura canned coconut milk (art. 158692200000), the coconut fat separates wonderfully during cooking and the result is a much better taste. The two products are therefore obviously not equivalent.@migros: What exactly is the difference between the Alnatura canned coconut milk and the Thai Kitchen tetra pack?
Hello Flint4, we informed the supplier, who carried out another test and found that the Thai Kitchen coconut milk can be boiled down at least as well as the Alnatura coconut milk. Boiling down the coconut milk causes most of the water it contains to evaporate, leaving coconut extract and coconut fat behind. This concentration results in a very intense taste. In Thailand, panang curry is primarily prepared in this way. This method of preparation is also possible with Thai Kitchen coconut milk from the tetrapak: if you boil the coconut milk for around 25 minutes, stirring constantly, the fat settles on the surface. Thai Kitchen products are primarily designed for the simple preparation of authentic dishes. This means that the coconut milk can also be used directly for all curries without having to boil it down first. The result is a creamy curry with a subtle hint of coconut. I often only need a very small amount of coconut milk to replace cream, e.g. in salad dressing or black tea... In view of the short shelf life, the 250/500ml packs are unfortunately not suitable for this purpose. How about offering the coconut milk in small portions, similar to the coffee cream portions? I would really enjoy that :-)...

@Cochise: Buy yourself a real coconut and drink the milk from it. Some of it is much sweeter. However, it depends very much on the condition of the coconut. The milk is best when the coconut is still very fresh and not yet overripe, i.e. just on the edge.
This allows the sweetness in the flesh of the coconut to settle in the milk inside. The milk becomes even sweeter if it is heated briefly and then allowed to cool again immediately. But then it is really over-sweetened :)
@Gast: You've got something mixed up. The liquid inside the coconut is coconut water. Coconut milk is made from the flesh of the fruit.

I shop almost exclusively at MIgros. I notice time and again that when I cook Thai food with your coconut milk, the sauce always flocculates.
This is not a shortcoming in terms of taste, but it is certainly a visual one. Doubting my cooking skills, I asked a Thai chef what I was doing wrong: here is her answer: THE PROBLEM WITH THE COCONUT MILK CURDING IS KNOWN TO US FROM CUSTOMERS. HOWEVER, THIS "EVIL" HAS ONLY OCCURRED WITH THE MIGROS VARIETY. THIS IS APPARENTLY ONLY SUITABLE FOR CURRIES TO A LIMITED EXTENT. WE RECOMMEND

The mentioned flocculation (coagulation) of the coconut milk can occur and, as you have already stated, has no influence on the product quality. We would like to point out that our coconut milk is produced without additives and is a 100% natural product consisting of coconut extract and water. As a result, the texture depends directly on the raw material and is not balanced by stabilizers, which means that the visual appearance of the coconut milk depends on the storage temperature. It should not be stored below 20°C. Below this temperature, the coconut milk can separate into two phases, which explains the appearance of coagulation, which is why we recommend the following instructions for use:
- Shake well before opening
- After opening, keep the coconut milk refrigerated in an airtight container.
- Please consume within 3 days

We have no influence on the sales prices of our competitors, so we cannot give you any information on this.
