The recipe is as follows: Put the curry paste in a pan with a little oil, fry lightly until the aroma develops, deglaze with the coconut milk dissolved in 3 dl hot water. Cut the kaffir lime leaves into strips and halve the lemongrass stalk. Add everything to the coconut milk and simmer, stirring constantly. After about 5 minutes, finely chop the chili peppers, add the sliced eggplants, beans (cut into pieces about 4 cm long), the corn cobs cut in half lengthways, the okras and the snow peas and continue to simmer until the vegetables are cooked. Add a little water if necessary. Season with the fish sauce and 1 teaspoon of sugar and add a little lemon juice if required. Finally, add the tofu or seared meat and serve with rice or noodles.
