Hello AAS, We apologize for having to reply only today. Acrylamide is formed by the Maillard reaction when starch is overheated, mainly when food is baked, browned, roasted, grilled or fried. The main building block for acrylamide in foodstuffs is the amino acid asparagine. Its synthesis is further stimulated by the presence of sugars, such as fructose and glucose. If these elements are present in a product, acrylamide is formed at temperatures above 100°C. As far as pesticides are concerned, we require our suppliers to comply with the quality requirements laid down by Swiss legislation. We have tasted and analyzed your and our reserve samples from the same batch and could not find any deviations from the norm. It is indeed the case that the pecans from South Africa and those from the USA show slight differences, for example in size and also in taste. However, these are still within tolerance and meet our quality requirements. Pecan nuts are a natural product and can therefore vary slightly from country to country. We randomly check various parameters every time we receive goods and if these are not met, the goods will not be delivered. We hope that you will enjoy the nuts again in the future.
