Hi stephead Thank you for your interest. At around 85%, fresh fruit has a relatively high water content. To ensure that they can be dried within a reasonable time without spoiling, it is almost inevitable in most cases that warm air (60 to 80 degrees) is used for drying. Unlike hazelnuts or seeds, for example, we cannot rule out the possibility that any fruit has come into contact with warm air above 42 degrees C during processing (e.g. after washing or during industrial post-drying).We hope that this information has been helpful and wish you an enjoyable week. I don't know what happened to these dates. I actually love them and buy them every week. But yesterday I came across a pack in which the dates were "crusted" (see picture). They really "steamed" when I opened them and were inedible :-(. What a pity.
