Why is it not clearly stated that this product is preserved with nitrite curing salt? Critical customers are misled by the statement "iodized table salt" at the beginning of the list of ingredients and the statement E 252 at the very end. In general, we would welcome it if more meat products were available without curing salt.
Hello seestaern, thank you for your post. We add potassium nitrate E252 (also known as saltpetre) to the sausage meat to make our Bündner Salsiz. This is a very old and traditional method of preserving meat. The use of saltpetre to treat meat has various advantages. For example, it gives the salsiz its characteristic aroma and color. If the saltpetre were omitted, the meat would tend to turn pale due to the oxidation of the muscle pigment and would not have the characteristic cured aroma. The result would be a completely different product that is no longer comparable to classic salsiz. Another important point is the use for reasons of product safety. The metabolism of microorganisms reduces the nitrate to nitrite, which has a microbial effect on the product and helps to prevent botulism - a form of food poisoning. By omitting the nitrate, further microbiological hurdles would have to be overcome (higher degree of drying, lower pH value). This in turn would affect the sensory properties of the product. Nitrate and the nitrite reduced from it are permitted in Switzerland with a defined maximum residue level for cured products. We have this maximum residue level checked regularly by an accredited laboratory as part of our analysis test plan. We take care to use as few additives as possible in our products, but always weigh up the use of additives against the product risk and sensory conditions. When declaring our products, we adhere to the legal requirements.
