Good evening Michi2000 Milk permeate is "the product obtained by removing milk protein and milk fat from milk, semi-skimmed milk or skimmed milk by means of ultrafiltration". Ayran is typically made from yoghurt, water and salt. The water can be replaced by milk permeate, which should (will) improve the taste. So nothing about rennet & co. Best regards Frederica
