Wow, they are good!
I peeled them, cooked the carcasses without the innards into a stock, let the claws steep in it at the end, took the meat out of the claws (a lot of work but delicious, about 1.5 tablespoons from a packet), cooked risotto from the stock, fried the meat of the back half (gave 92g in the raw state) in butter and served it with the risotto together with the claws. The ultimate in delicious!!!
I wrote this 4 years ago and the 5 stars remain. This year I prepared them in exactly the same way again, but obviously got specimens with mature shells, which is why I couldn't cut or crack the claws along the ridge, so I barely got to the claw meat. It will be interesting to see if I can catch some next time whose shells are not yet so hard.

out of 18 pieces 5 were bad (tail at head end dark gray and smelled very bad) schaade, was the appetizer for Christmas Eve. Will never buy these again
