As no changes were made to the recipe, it was important for us to respond to your comment in a well-founded manner. The clarifications made with the relevant department took longer than expected. We're sorry to have to give you news only now. Here are the results of our investigations: Thanks to the information provided, we were able to check samples from the same production series, but found no irregularities. The same applies to the control of our production protocols. The product was processed in accordance with the established guidelines. In view of these results, we can rule out any general production defects. However, we do have our suspicions: Mochi" consists of a core of ice cream wrapped in a rice paste. These different textures make the products sensitive to temperature variations. It therefore seems natural to assume that the hard consistency is due to a break in the cold chain during preparation. We apologize for any inconvenience caused. We have immediately asked all areas involved to ensure correct product handling. Hello NicolasRi, the ice cream contains pasteurized milk and cream. In addition, the whole ice cream is pasteurized again at 78°C for 25 seconds. Best regards, your M-Infoline team
