Why does this salmon have sugar in it?

Thank you for your interest.
We use sugar in our Sélection king salmon for two reasons: firstly, it makes the salmon finer than if only salt is used. Secondly, sugar helps the salt to stay on the fish for longer and not be washed away by the moisture. So basically, the sugar sticks to the salt.
We hope our reasoning is understandable and wish you a nice summer's day.

Too bad. I love Selection products. Unfortunately, the salmon has sugar in it. It doesn't have to be. I've eaten freshly smoked salmon in Sweden and the Netherlands, which only has salt and salmon in it. This salmon was super, super tender and the taste was terrific. So it is possible.

I now use budget salmon. it's super tasty and has no sugar in it.
Very good and expensive salmon e.g. in the Coop also has no sugar e.g. Naturaplan organic smoked salmon from Ireland
