I've noticed that almost none of the grated cheeses say whether they are spicy or mild. Couldn't you generally print a scale from Super Mild to Very Recycled on cheese? Grana Padano, Parmesan, Gruyere Rezent would certainly be on the spicy scale for me... Or another question: Is Emmenthaler always mild? Is Gruyere more subtle? SBrinzer more so? Maybe I don't have enough cheese experience at 30... A guide would be helpful...

The rather young Gruyère AOP with an age of 6 to 9 months is characterized by its delicate and fine taste, which delights the palate in search of mildness. Gruyère AOP Réserve owes its intense aroma to its maturation period of more than 10 months. Its taste is strong and fruity, and it has a firm, slightly crumbly texture.
With Emmentaler AOP, the typical taste that results from the propionic acid fermentation gives it a slightly salty and aromatic-sour-sweet taste.
However, Sbrinz AOP is matured for at least 18 months and has a slightly malleable, slightly to moderately crumbly and sticky, rather dry texture. In the mouth, its fruity taste is underlined by notes of roasted coffee with a slightly acidic finish. It matures for a long time, lasting at least 20 months.
There can be sensory differences between cheese dairies, cheese production, vats and even cheese wheels. As cheese is a living and artisanal natural product, it can never be completely ruled out that the products will continue to develop. A change in parameters can have a sensory impact on a product like this cheese. The grated cheese tastes great. The packaging is annoying. Couldn't grated cheese be sold in a kind of tub? Then I wouldn't always have grated cheese on the table that trickles out of the packaging.

Fine, often bought by me. But the packaging is impossible to open properly, especially when frozen. And when is it available in organic quality (also applies to the Gruyere grated)?
