Citric acid is found in many fruits (including lemon juice) and is even a natural component of every human cell in low concentrations. However, the intestine is able to absorb more heavy metals and radionuclides when larger quantities of E 330 are ingested. As an additive, E 330 and its salts (citrates) are obtained by fermentation processes from sugar industry waste and genetic fermentation or by treating dichloroacetone with hydrocyanic acid and cyanide. Although citric acid is an important component of the metabolism and is present in many fruits, it has little in common with the additive.

The additives currently approved by the World Health Organization (WHO) and the Federal Office of Public Health (FOPH) are harmless to health! They are among the best-studied substances in our food and are only approved once strict toxicological tests have proven their harmlessness.
Citric acid is produced biotechnologically with the help of microorganisms, in particular the mold Aspergillus niger. Glucose or molasses are used as a culture medium. Citric acid is considered harmless. It is completely utilized in the body. There is no prescribed maximum quantity. However, only as much may be used as is absolutely necessary for the desired effect.
Citric acid is always used in a product for a specific reason. Depending on the product, citric acid fulfills different functions: It prevents oxidation reactions, which could lead to undesirable changes in color and taste; it acts as an acidifier and thus extends the shelf life of a product; and last but not least, it also has an effect on the taste, in that it can give it a refreshingly sour note.
In principle, the industrial processing of food is nothing more than an advanced domestic preparation. However, as the demands placed on such products are much higher (long shelf life, transportability, appropriate taste, appetizing appearance), the use of additives is often essential.
