Unfortunately, the cheese has no flavor and becomes very rubbery! The cheese hardens quickly, as the cheese only really melts at a high temperature, so the fat separates from the ice white. This is how the cheese turns into Chätschgummi. It wasn't the only raclette cheese on the table, so we were able to make a nice comparison!
Tasteless and rubbery.
The 4 months of maturation were not enough to conjure up any flavor here.
The melting point of the cheese is too high, so it hardens very quickly on the plate.
Too bad, last year the cheese was wonderful.
