Wow! my good surprise of the month... super tender, gelatinous just as it should be top! I brushed it with a honeyed mustard, garlic, onion and paprika powder, cut slices of preserved lemon and incorporated them into the pre-sliced spaces I'd made beforehand, added veal stock and white wine and bopped it in the oven for 90 minutes to serve with sweet potatoes.
