Good morning Nadtipp In cheap balsamic vinegar, a mixture of wine vinegar, thickened grape juice and sugar couleur is whipped together, whereby the sugar couleur is only responsible for the color of the vinegar. Without it, the cheap balsamic vinegar would simply not be as brown and could not be sold as balsamic vinegar in the supermarket. Below you can read an answer to a guest from M-Infoline . Antioxidants are used on the one hand to prevent the formation of vinegar nuts (a gelatinous mass is formed by an accumulation of acetic acid bacteria, but this is harmless to health and can be filtered out using a filter (e.g. coffee filter)).
On the other hand, antioxidants are used in wine vinegar, for example, as wine vinegar contains polyphenols which can change the color due to the oxygen. The antioxidant protects the product, especially when the bottle is still sealed. Once the bottle has been opened, the sulphites (antioxidant) evaporate within a few days.
In "normal" vinegars, a colorant is used to compensate for natural color variations. The use of colorants is not permitted in wine vinegars. The color comes from the substances present in the wine. Caramel may only be used in balsamic vinegars from Modena.

I just bought some this morning and had a funny surprise... the spray dispenser package is 0.10 cheaper than the refill with a silly cap. Normally, the refill is simpler (which it is) and therefore cheaper (which it isn't). Why is the refill more expensive than the product itself?... ecologically speaking, it's not great... Otherwise, the taste is very, very good!

Your observation is correct, there is a price difference of CHF 0.10 between the two products. As our supplier has increased its prices, we should also have increased the price of the spray article. So far, however, we have been able to forego this and pass on the benefit to our customers.
