Why does the Migros braided bread contain sugar? It would be great if they stopped using sugar in it.
Hello Michi2000,thank you for your input. We add only a very small amount of sugar to our braided breads. Sugar is added to the dough for both traditional and technical reasons: As a yeast nutrient, it improves rising and fermentation, has a positive effect on crust color and crispness, and leads to longer shelf life and a moister crumb. However, the sugar component has virtually no sensory impact. At this time, we have no plans to remove sugar from our braided bread recipes.

Why are barn eggs and not free-range eggs used for the plait?
Hello MiStpn, thank you for your question. We would like to process only free-range eggs. Due to the current egg shortage (CH, EU), this is unfortunately not possible at the moment. JOWA AG is committed to using only eggs from animal-friendly husbandry - this is also laid down in our raw materials charter.
