Always tender and delicious. To make it easier and, above all, to balance the perfect cooking between the thicker and thinner parts, I cut them in half (not completely) and open them wide for pan-frying.
You can easily make them cordon bleu style and vary them to suit your tastes, e.g. by adding zucchini cut into strips, stuffing them after cooking, as you would for baked potatoes and the like.
You can even grill them, wrapped in extra-strong aluminum foil to prevent the meat from drying out.
