They look like those handmade by aunt. Great.
Recipe definitely to be revised, they seem to be made with low-flour potatoes to which an avalanche of semolina has been added to give texture. After baking they remain chewy. Flavor-wise they are not bad...but maybe it is worth at least substituting semolina rather than potato flakes.
