is this corn digestible ? or "authentic" south american ?http://www.lateinamerika-studien.at/content/geschichtepolitik/mais/mais-102.html masaharina or nixtamal has been used in south america for over 700 years, because otherwise corn is not digestible. >> pellagra. i am looking for healthy cornmeal that has been nixtamalized. do you offer this ? is this product nixtamalized or do you have tapas etc. made from masa harina ? thank you.

Hello beno, thank you for your inquiry. The nacho chips are made from ground corn, which is a different process to the one you describe. We also do not have corn flour of this type in our range. However, we can tell you the following: Pellagra is a severe niacin deficiency that usually occurs in combination with a protein deficiency. This serious disease occurs in very poor countries with a very unbalanced diet. In our latitudes, a deficiency is only to be expected under extreme deviations from the usual dietary habits (e.g. if one were to eat practically exclusively maize).
