Freshly baked items are not yet fully baked (hence the reference in the text to correct baking). We therefore spray the braid with a very small amount of ethanol to preserve it. This evaporates almost completely when baked correctly, so that there is no alcohol left in the finished baked product. Ethanol has a preservative effect.
