Hi PatJ, thanks for your question about iron gluconate. Our black olives start out as green olives. We blacken them through a natural oxidation process with atmospheric oxygen. We stabilize them with ferrous gluconate (E 579) to ensure that the beautiful, uniform black color is retained and does not turn greyish-brown.
