good and tender, what I don't quite understand is that the meat is matured on the bone first and then vacuum-sealed again. Vacuum maturing always leaves a slightly sour taste. The advantage of maturing on the bone is the nutty taste. Vacuum-sealing it again afterwards brings this sour flavor back into the meat. I can understand that you want to use up as much as possible of the product, which is already subject to considerable shrinkage. However, this vacuum solution is moderately good for the reasons mentioned above.
