Organic stands for particularly species-appropriate animal husbandry, ecological and sustainable agriculture in an intact environment. The modified atmosphere packaging does not affect this unique quality. The gas mixture consists of 80 % oxygen and 20 % CO2. Oxygen promotes meat maturation, while CO2 inhibits bacterial growth and ensures the desired red meat color. This is why packaged meat is usually sold in an oxygen atmosphere. In the case of beef and other types of meat, the color of the meat at the point of sale is one of the main drivers of the purchasing decision.
At Migros, meat in general and beef in particular is stored for maturing (up to 3 weeks) in order to obtain the desired tender meat. It is then offered in various forms of packaging. The use of modified atmosphere packaging is clearly visible to the consumer with the label "Packaged in a modified atmosphere" and they therefore have the choice of buying meat that has been packaged in a modified atmosphere or meat that has been packaged without a modified atmosphere or is even offered fresh at the counter.
