Hi, after reading dozens of comments about this product, I'm still a bit confused about pasteurization etc. Some replies from Migros claim that the sauerkraut is not heat-treated (pasteurized). If there really are still live bacteria (the good ones!) in it, the bag should swell. Or there should be a valve on the packaging. I and certainly most raw sauerkraut lovers want live bacteria! Could you please clarify this and preferably print appropriate consumer information on the bag? Many thanks
Hello Paratech, thank you for your message. The raw organic sauerkraut in the bag is not pasteurized. It is fermented and still contains lactic acid bacteria. The product has a packaging with a higher air permeability (this is like a "valve") than other sauerkraut bags, which are pasteurized. This greatly reduces the risk of bloating. When it comes to vitamins, vitamin C is particularly worth mentioning: just 200 g of sauerkraut covers more than half an adult's daily requirement of vitamin C. The so-called spontaneous fermentation process is used for raw organic sauerkraut. This means without further heat treatment or pasteurization.
