What does 'May contain ...' mean? So far we have never noticed that the crispbread contains sesame seeds (on one side-very many). I always thought that this allergen warning meant that the product was made in the same machine as a product that contained these allergens. And therefore one or two sesame seeds could sneak into the product.

Hello famengler, thank you very much for your feedback and the additional data. We really appreciate your help. You are indeed correct in your assumption. The note "may...contain" is required by food legislation if the presence of traces of an allergenic ingredient cannot be ruled out. One such ingredient is sesame, whereby the "impurities" can occur during harvesting, transportation, storage of raw materials, in the production plant or on a production line. The amount you describe is clearly too much. However, we did not detect any signs of abnormalities in the samples from the same production series or in the associated production documents. The processing was carried out in accordance with the specified guidelines. In view of these results, we rule out a general manufacturing error. Nevertheless, we have a suspicion: We suspect that there was a mix-up during the product changeover, so that our line personnel accidentally filled the system with sesame instead of rye. This should not happen. As an immediate measure, we asked all departments involved to ensure that the product is handled correctly. We are keeping an eye on this issue. If necessary, we will make adjustments. We apologize for any inconvenience caused. The list of ingredients contains 2 entries: 95% wholemeal rye and salt (the remaining 5%?! 🤢). I assume that the 95% refers to the dry weight and that water does not need to be specified as it is no longer present in the end product. However, the nutritional table only shows 1.4g of salt per 100g. What are the remaining 3.6% (95g wholemeal rye flour and 1.4g salt per 100g - there are still 3.6g undeclared...) Thanks for the food technology regulation clarification 😉
Hello zuchtfisch, unfortunately we can't quite understand what you mean by the 2 entries in the list of ingredients? The crispbread consists of 95% wholemeal rye flour, 1.4% salt and the rest (approx. 3.6%) is water. Best regards, your M-Infoline team
And why is the water not on the list? If it contains more water than salt, that should also be declared, shouldn't it? Or what is the regulation?
Hello zuchtfisch, if the amount of water contained in the end product is less than 5%, the water does not have to be included in the list of ingredients. How many slices are in a pack?
