Wow, they are good!
I peeled them, cooked the carcasses without the innards into a stock, let the claws steep in it at the end, took the meat out of the claws (a lot of work but delicious, about 1.5 tablespoons from a packet), cooked risotto from the stock, fried the meat of the back half (gave 92g in the raw state) in butter and served it with the risotto together with the claws.
