Hello natil, thank you for your question. We have clarified this and can inform you of the result as follows. Freshly baked items are not yet fully baked (hence the reference in the text to correct baking). We therefore spray the braid with a very small amount of ethanol to preserve it. This evaporates almost completely when baked correctly, so that there is no alcohol left in the finished baked product. Ethanol has a preservative effect.
