It is inexplicable to me how you can be so stubborn .... I took 2 croissants out of a new bag last night and let them defrost/rise covered at RT for 7 hours, then brushed them with coffee cream and baked them for 15 min at 180 degrees hot air. For comparison, I prepared one from the same bag according to the instructions. There is a WORLD of difference between the two versions, the volume of the pre-defrosted croissants is much larger and they are also baked through compared to the one baked according to the instructions. If people prepare the croissants according to the instructions, are not satisfied and then no longer buy them, the same thing happens to an actually good product that happened to many others before it: it is removed from the range because there is too little demand for it, only to be replaced by a cheaper, inferior product - that would be a real shame

Hello Chur69, thank you for your feedback and for documenting it with the photo. The new production process is the basis for consistent quality. The recipe has not been adjusted, but our aim is for the new production process to give the top more volume and an airy structure with clearly recognizable layers. The baking result is very much dependent on the domestic oven and how it is used. For "hot air" or "top/bottom heat" without steam, we recommend placing an additional, heat-resistant container filled with water in the oven during baking. For example, you can place a casserole dish with water directly on the bottom of the oven. This allows the peaks to rise better and develop their volume nicely. It also gives them a nice shine. ... and no, the new recipe doesn't work nearly as well as the old one. We've been testing it for over a year now. The results with frozen blanks were disappointing compared to the overnight defrosted ones. The packaging should also state the defrosting method. It would be a shame if a very good product were to disappear just because it was prepared incorrectly. If you don't have time and accept the poorer quality, you can still bake the croissants frozen.

Hello Otaner63, we have not changed the recipe. However, the croissants are now produced on the new croissant line. We have not made any changes to the baking instructions either. These are tried and tested and will therefore be retained. Best regards, your M-Infoline team

Changes were made about 3 years ago. If you bake the croissants according to the instructions, they don't rise properly. We tried this again and again for over a year, but if you bake the croissants as previously instructed by leaving them to rise overnight, you always achieved good results. I cannot confirm your good results with the frozen dough pieces and recommend that you try out how the croissants might turn out.

Unfortunately, filling and weight distribution is still a problem. We bought 4 packets of 12 portions each for 48 people, but unfortunately there were only 10 croissants in 2 packets. Unfortunately, the bags are not marked with batch numbers and cannot be traced. I could send a photo. I know that we have other problems to solve but, as a consumer, if it says 12 portions, there should be that many inside.

Hello Profigipfeli, thank you for sending the pictures. When producing M-Classic Buttergipfel, we check the contents using a scale. We also check the bag contents manually at regular intervals. We did not notice any deviations during the manual counts for the production in question. In the packing process, there is no continuous control of the number of packaged items. For this reason, a deviation in the bag contents may occur in individual cases if the weight of the peaks fluctuates. If the peaks are heavier, the bag will reach the weight even with too few peaks. The last productions were checked, but there were no deviations in the manual counts. However, there is no continuous control of the packaged quantity in the packing process. For this reason, it is possible that in individual cases a deviation in the bag contents may occur if the weight of the peaks fluctuates. If the peaks are heavier, the bag weight is also reached with one peak too few. We assume that this was the case with your bag and that it was therefore not ejected automatically. The production staff have now been informed and made aware that an additional bag content check must be carried out in the event of major weight fluctuations. Why are there suddenly only 11 croissants? And the price is still the same? Now it just says 660gr I'm disappointed although I still like the croissants, they rise wonderfully!

Previously a pack contained 540 g for CHF 6.80. Now a pack contains 660 g and is sold for CHF 7.95. The price per 100 g has therefore fallen from CHF 1.26 to CHF 1.20. I have just submitted a review regarding the frozen croissants and would like to add here that I have always put them in the oven frozen (the V-Zug professional baking system always guarantees top results by steaming them beforehand). Now, when I read all the reviews afterwards, I notice that you have received a lot of rather negative reviews for about 6 months now. My question is therefore: do you take these customer reviews seriously and when will you finally return to the old recipe?
