that doesn't matter in your case, because carbohydrates are not lost during frying. A prepared pack of rösti contains the same number of calories as a non-prepared pack, only the water content will be reduced and therefore 100g of the prepared product will contain more calories than 100g of the raw product (the pack will also be less heavy)
