Hello Can I also mix this durum wheat semolina with "normal" flour and use it instead of pizza flour (5% proportion) or spaetzli flour (50% proportion)?

Hello Nicelandi, thank you for the question. This durum wheat semolina is a coarse semolina for semolina dishes. The durum wheat semolina used in pizza flour or spaetzli flour is much finer in granulation. Accordingly, we cannot recommend the use described. Kind regards, your M-Infoline team

i mix this for pizza dough. use 200 grams of semolina and 300 grams of mbudget flour. just use a little less water (2.8 - 3 dl) and experiment a little.

Why is the semolina in plastic packaging? It is available from competitors in paper, such as flour and sugar

Hi Poschung234, plastic is not worse than paper per se. Compared to plastic alternatives, paper packaging is up to twice as heavy with the same tensile strength, offers little product protection and, above all, requires significantly more energy, water and chemicals to produce. If you look at the Coop homepage, you will see similar products such as polenta, bramata etc. packaged in plastic. Durum wheat semolina is more of an exception. Our supplier is currently unable to switch from plastic to paper for technical reasons. Kind regards, your M-Infoline team

The Griessköpfli recipe on the packaging is my absolute favorite Griessköpfli recipe. Unfortunately, the durum wheat semolina is sold out everywhere and I no longer have the recipe... Does anyone still have a packet at home and could pass on the recipe? That would be great!

Hello SiMack, we will be happy to send you the recipe. Fruit grits, ingredients for 4 people: 3dl milk, 3dl water, ½ vanilla pod, 1 pinch of salt, 100 g durum wheat semolina, 3 tbsp sugar, 100 g cream quark, 600 g fruit compote of your choice (e.g. plum, apricot or berry compote). Preparation: Pour the milk and water into a pan. Cut the vanilla pod in half lengthways, scrape out the seeds and add to the milk water together with the salt and bring to the boil. Add the semolina and cook over a low heat for 15-20 minutes, stirring until it forms a porridge. Mix in the sugar, quark and 2 tbsp fruit compote. Pour the mixture into cold rinsed ramekins. Cover and leave to cool. Refrigerate for at least 4 hours. Turn out the semolina cakes onto plates and serve with the remaining fruit compote. Enjoy the taste! Best regards, your M-Infoline team
