This meat loses a lot of water when seared and only became really tender after over an hour, which indicates that it is not à la minute meat, but pieces that are actually intended for braising.
It is only declared as "meat from the stotzen", whereby the stotzen includes both à la minute pieces such as nut or corner piece as well as braised pieces such as undercut, which makes the specification less specific.
My question is whether it would be possible to clearly indicate if it is cutlets for braising, as this would make it easier to make an informed purchasing decision and avoid disappointment, as also mentioned in other reviews.

As a matter of principle, our sliced beef always comes from the stump. Due to the fact that meat is a natural product, variations in quality cannot be completely avoided, which explains the tough consistency you describe.
