This season we have regularly used products from suppliers other than our "standard" suppliers. This can cause certain differences in terms of oil separation and visual appearance. In any case, all our raclette references are tasted by our expert team before production. Raclettes are evaluated according to the following criteria: the appearance of the product when cold and after melting, its texture, taste, bitterness and salt content. If the results do not meet our quality standards for this product, the batch concerned is blocked. There is also a natural heterogeneity between products such as cheese. Cheese is indeed a natural, living and artisanal product. There can therefore be sensory differences between production batches and even within the same production. Of course, these variations should not exceed the standards set out in the specifications and our raclettes are tasted several times a week by our team of tasters. As mentioned above, if the specifications are not met, the affected batch will be blocked and the supplier will be informed of the problem. We therefore hope that you still enjoyed the raclette. On 13.9.2019, we tasted a reference sample from this production line. The following parameters were evaluated: visual appearance (in the unmelted state), fat separation, consistency (gummy), bitterness, salt content and taste. During the tasting, our team noted two slight discrepancies concerning visual appearance and consistency (gummy). However, these faults were not sufficiently pronounced to justify blocking deliveries. Generally speaking, cheese is a natural product that can present slight variations, which explains the two discrepancies noted. These must not, however, exceed the defined tolerance values.
