Modified starches are only declared under the generic name (i.e. without an E number or individual designation). This exception for modified starches is expressly laid down in the Foodstuffs Act. As modified starches are a separate functional class, no further functional class must be indicated.
If modified starches are produced from gluten-containing raw materials, the origin must be indicated and the gluten-containing ingredient highlighted: "modified wheat starch". Best regards, your M-Infoline team
