Hello redprince, the longer the juice is stored, the more vitamin C is lost. After a few weeks, only a fraction of the vitamin C originally contained is still present. For reasons of shelf life, small amounts of the preservative potassium metadisulphite (E 224) are added to the lemon juice in the bottle. The juice is quite well protected by the acid it naturally contains. The acid prevents premature spoilage of the product by microorganisms such as bacteria, yeasts or molds. However, the acid has little influence on certain chemical reactions that take place when this product is stored for weeks and which lead to changes in color and loss of flavor.
