Do I understand correctly that this cheese has a naturally matured rind? Is there any bacteriological or other reason why this rind should not be added to soups?

Hello codebar, the cheese rind of M-Budget Fontal is naturally matured and is not specially treated. In principle, the following applies to cheese: unless it is stated on the packaging that the cheese rind is made of plastic, kerosene or wax or has been specially treated, the cheese rind is in principle edible. However, as undesirable microorganisms can colonize the surface, people with a weakened immune system, pregnant women, small children and older people in particular should not eat the rind as a precaution.
