Dear Migros! What is the difference between the cheeses "Gruyere Rezent" and "Gruyere Surchoix"? Although both words mean "strong", there must be a difference, as the packaging is also different. Unfortunately, none is apparent. Please provide clarification, including details of the ripening times. Thank you very much!

The difference lies in the ripening time: the aged version matures for more than 8 months in the cellar, while the Gruyère surchoix is stored for more than 11 months. The longer storage period enhances the aroma. The latter is more intense and full-bodied, whereas the aged speciality is characterized by a softer taste and crumbly consistency. Hello, I was wondering if this product contains rennet or not! I think it's a shame that the ingredients are not marked! And I'm having a hard time finding out which cheeses contain rennet and which don't. Thanks for your help :)

Hi Alicia, Thank you for your message. Salted Gruyère is made with animal rennet. One reason for not declaring the type of rennet is a regulatory exception to the obligation to indicate the ingredients in the case of cheese. In the case of cheese, butter, fermented milk and cream, it is not necessary to indicate the ingredients when only the additives required for their manufacture are involved: lactic substances, enzymes and micro-organism cultures, or the salt required for the cheese - except in the case of fresh and processed cheeses (iodized and fluorinated salt/cooking salt/table salt are excluded from this exception).
